If you’ve ever come across a bag of baby carrots that you totally forgot about, you’re not alone. While you could snack on them with a bit of hummus, you can also transform them into a delicious side dish by roasting them with a maple-balsamic glaze that is absolutely to die for. We promise that you’ll be so excited to eat carrots once you make these carrots.

What You Need

1/4 cup balsamic vinegar

1/4 cup extra virgin olive oil

2 tablespoons maple syrup

1/2 teaspoon crushed red pepper flakes

1 1/2 pounds baby carrots

salt & pepper, to taste

chopped parsley, to garnish

What To Do

Preheat the oven to 400 degrees Fahrenheit. Mix together the oil, vinegar, maple syrup, and the pepper flakes. Toss in the carrots and season with salt and pepper, to taste. Toss until the carrots are all evenly coated. Place the carrots on a large baking sheet, making sure to evenly distributed and not overcrowded.

Roast the carrots in the oven until they are tender and a fork easily can be put through them. They will look slightly charred, and this should all take about 30 minutes. Garnish the carrots with fresh parsley before serving.
